Funfetti Protein Blondies

MACRONUTRIENTS (9 servings) 

15g of Protein, 9.2g of Fat, 17.5g of Carbohydrates! 

Prep Time - 20 minutes 

Bake Time - 20 Minutes 

Recipe Yields - 9 Servings 

Oven Temperature - 350 degrees Fahrenheit 

Baking Pan - 9x9 



1/2 Cup flour (I used Quinoa flour because it is low in fat, high in carbs and protein) 

3 Scoops vanilla flavoured protein powder 

3 Tbsp Vegan Butter 

1/2 cup unrefined sugar (I vary using sucanat, organic golden sugar and coconut sugar, feel free to make this sugar free by adding stevia or any sugar alcohol substitute!) 

3 Eggs (room temperature)

1 Cup of 0% greek yogurt 

100g White chocolate (finely chopped)

Dash of Vanilla Extract 

Pinch of Pink hHimalayan sea salt 

Sprinkles! (As many as you'd like) 



1 - Melt down butter and incorporate sugar and vanilla extract (1-2minutes of mixing)


2 - slowly add one egg at a time while beating mixture (tip: if your eggs aren't room temperature, a quick trick is to place eggs in a bowl of warm water for 5 minutes - this will mimic the texture of the egg as if it was left out to achieve room temperature) 


3 - after incorporating eggs, add greek yogurt and finely chopped white chocolate 


4 - sift together protein powder, flour, and salt - once incorporated, add mixture slowly to wet ingredients (do not over mix, over mixing flour makes your batter dense!) 


5 - after incorporating everything into the batter, add in as much sprinkles as you'd like (tip: make sure this step is done quickly, as leaving the sprinkles in the batter for too long causes them to 'bleed' and release their colour, taking away from the funfetti effect when baking!) 




6 - add into a 9x9 baking pan and bake off at 350 for  20 minutes, or until a tooth pick is inserted and comes out clean!
