Pumpkin Chocolate Chip Protein Cookies

Macronutrients (per serving) - 118 Calories, 10g Protein, 3g Fat, 10g Carbs

Prep Time:3 hours & 30 minutes (Dough needs to be chilled for 3 hours) 

Bake Time: 7-10 minutes

Recipe Yields: 12 servings 

Baking Pan: Cookie Sheet

Oven Temperature: 350 degrees fahrenheit



1/2 cup unsalted vegan butter, melted 

1/2 cup pumpkin puree 

Dash of vanilla extract 

1 egg 

1 cup 0% greek yogurt 

1/2 cup organic sugar (or substitute with 1/3 cup stevia) 

1/2 tsp nutmeg, clove, ground ginger 

1 tsp cinnamon 

1.5 cup quinoa flour 

3 scoops protein powder (vanilla or salted caramel go best) 

1/4 tsp baking soda 

1 cup dark chocolate chips 



1. Melt vegan butter and mix well with organic sugar and vanilla extract. 


2. Add in egg, pumpkin puree and greek yogurt - mix well until all ingredients are well incorporated 


3. In a separate bowl, sift together flour, protein, spices, and baking soda 


4. Mix wet and dry ingredients together until all ingredients are combined. 


5. Lastly, fold in chocolate chips and place cookie dough in the refrigerator for a minimum of 3 hours 


6. After being chilled, roll out cookie dough balls into 12 even portions and place on a cookie sheet 


7. Press down slightly on each ball with your fingers, and place in oven for 7-10 minutes
