Peanut Butter Protein Truffles

MACRONUTRIENTS (PER TRUFFLE) - 1g Fat, 7.5g Protein, 3.6g Carbs

MACRONUTRIENTS (ENTIRE BATCH) - 8g Fat, 60.5g Protein, 29.5g Carbs


- 3 TBSP Powdered Peanut Butter

- 4 TBSP Cashew Milk 

- 2 Scoops Optimum Nutrition Whey Protein Powder (I used chocolate flavour) 

- 2 tbsp coconut flour 



1. Mix powdered peanut butter with cashew milk and mix well until a loose-peanut butter paste is formed 




2. add protein powder and incorporate well 




3. thicken batter with coconut flour and mix until you have a dough like consistency 


4. place mixture in fridge to cool for 5 minutes (this makes rolling the truffles a little easier!) 


5. take dough out of fridge and roll into equal portions 




6. top with any toppings that you desire - i used cacao nibs, coconut shreds, sprinkles and my personal favourite, coconut sugar/cinnamon mixture (legit tastes like a cinnabon)
