Lemon Loaf (Low fat, High Protein)

14.5g protein, 6g fat, 20g carbs (per serving)

Recipe Yields: 7 Servings 

Prep time: 10 minutes 

Cook Time: 50 minutes 



  • 1 cup gluten free flour 

  • 1/2 cup sweetener of your choice 

  • 1 cup plain 0% Greek yogurt

  • 1 tbsp coconut oil 

  • 1/2 cup freshly squeezed lemon juice 

  • 3 eggs

  • 2 scoops of vanilla protein powder (I used Optimum Nutrition's Casein)  

  • 1 teaspoon of baking powder 

  • 1 teaspoon of baking soda 

Cream Cheese Icing:


  • 1/3 cup freshly squeezed lemon juice 

  • 1 tbsp stevia 


    2 tbsp low fat cream cheese (softened at room temperature) 




    1. In a bowl, take your coconut oil (softened at room temperature) and mix well with your sweetener of choice - once incorporated, mix in your 3 eggs, greek yogurt, and lemon juice. 


    2. Now add in your dry ingredients: add in your GF flour, protein powder, baking powder & soda - once incorporated, place inside your greased and lined loaf pan. 


    3. Bake off at 350F for 50 minutes. 


    4. To prepare the icing, whisk together your room temperature cream cheese with stevia and lemon juice - once at your desired consistency, place aside until your loaf has cooked and cooled, then top off and let cool again, before slicing!
